Maybe Meghan has never worked in an office. So correspondance are stamped and logged upon recipient. So the letter Meghan has would have a dated stamp from the Met.... As it's a copy of a letter they received.

I believe that Meghan wrote the letter, to pressure the royals. Police were called to see the letter. Royal family did not want this mess and kept going with Meghans antics, simply because the optics of her having such a dad would be terrible as they were dealing with Andrew. This whole situation smacks of drama, which would be silly if it wasn’t for such horrific allegations.
