there are 2 other options, first he has what looks like an electric oven or a microwave which already has a timer, and if it doesn't, another way to get 15 mins is flipping both hourglasses at the same time and not cooking until the 7-min one runs out, right after the 7-min hourglass runs out, u start cooking and once the 11 min one finishes the remainder from the initial 7 mins, immediately flip it to continue another 11 minutes on top of the 4 minutes that were left from it after going 11 minutes - 7 minutes, and u can also use the initial seven minutes for preparing ur dish unless it's 15 minutes from start to finish, tho I doubt that and that the 15 minutes is the cooking time which means the 7 minutes would help with preparing the batter and stuff
