Turkish Ezogelin Soup Ingredients • 1 cup red lentils (170-200 ml / about 160 g) 2 tablespoons rice (about 30 g) 2 tablespoons bulgur (about 30 g) • 1 onion, finely chopped • 2 cloves garlic, finely chopped • 1/2 tablespoon red pepper paste • 1/2 tablespoon tomato paste • 2 tablespoons olive oil (about 30 ml) 6.5 cups hot water (about 1.5 liters - you can add more boiling water later to adjust the consistency) • Salt, cumin, black pepper to taste For the topping: • 1 heaping tablespoon butter (about 20 g) • 1/2 teaspoon red pepper flakes • 1 heaping teaspoon dried mint Method 🍲 1. Rinse the lentils, rice, and bulgur, then drain well. 2. In a large pot, heat the olive oil. Add the onion and garlic, and sauté for about 1 minute. 3. Stir in the tomato and pepper pastes, and cook for another minute. 4. Add the lentils, rice, and bulgur. Mix well for a few turns, then pour in the hot water and add salt. 5. Cook over medium heat until the grains and lentils are tender. Stir occasionally to prevent sticking. 6. The soup will be thick. At this stage, add more boiling water if you prefer a thinner consistency. 7. Blend the soup lightly with a hand blender, just enough to bring it together. It should remain slightly textured. 8. In a small pan, melt the butter. Add red pepper flakes and dried mint, stir quickly, then pour over the soup. Serve hot with lemon wedges on the side. Enjoy🫶 #EasyRecipes #homemadesoup #comfortfood #soup #healthysoup
