@madelinemehria: first time making KATHIEW ⭐️ how’d I do? #kathiew #beef #soup #cambodianfood #EasyRecipe Broth - Parboiled beef bones (boil for 10 mins to clean them and remove impurities) - Parboiled chuck roast (this is what I had on hand, but you can also use short rib, oxtail, brisket… whatever you like!) - Charred yellow onion, shallot, garlic, ginger, and galangal (you can broil, air fry, or use the stove flame until nice and toasty, but not burnt!) - Lightly smashed cilantro stems & green onion whites - Salt - Celery, daikon, and carrots - Fried garlic - Lightly toast pho spices (cinnamon, star anise, coriander seeds, fennel seeds, & cloves) - Season with pho soup base, fish sauce, msg/salt, & rock sugar - Beef balls Simmer the parboiled bones, chuck roast, charred aromatics, cilantro stems, green onion, and salt for about 3 hrs, until the meat is tender, skimming off fat and impurities as they rise. Remove the chuck roast, then add celery, daikon, carrots, fried garlic, and more water and simmer another 3 hrs, adding the spices for the last 45 mins. Set aside the carrots and daikon, strain the broth, and return it to a clean pot. Add a little water and season with soup base, fish sauce, msg/salt, and rock sugar. Taste and adjust to how YOU like your kathiew! Add the beef balls and simmer another 30 mins, then serve. Bowl - Rice noodles - Sliced chuck roast - Bean sprouts - Yellow onion - Green onion - Cilantro - Thai basil - Lime - Chili oil - Hoisin & sriracha

What is the difference between Kathiew and Pho? Just wondering. They seem very similar to me

Kathiew is so superior, so don’t compare it to other dish, just enjoy this heartwarming dish from Cambodia

People asking if this is Pho, I'm just going to say they have similarities but for me it is richer. Kuy teav (Kathiew) is a noodle dish with Chinese roots. Specifically from the Teochew people and they settled in Cambodia and other SEA countries. The Teochew people call it "gway teow (gue dieu). The Malaysians call it "Kway teow", the Indonesians call it "kwetiau", Singaporeans call it "kway teow th'ng" and Thais call it "Kuai tiao". Each country has its own pronunciation, but you can tell see the similarities in the name of the dish. If you want to think this is a copy of Pho, maybe you should wonder why the Vietnamese are the only ones that call it Pho? But side note, the Vietnamese has a similar dish and it's called "Hu Tieu" or "Hu Tieu Nam Vang". Nam Vang meaning "Phnom Penh". 😅
