I’d say the America’s Test Kitchen Cooking School book is the best for beginners who don’t want to improvise and want very specific handholding

1. In addition to the Flavor Bible, I would add The Flavor Matrix, by James Briscione.
2. Six Seasons by McFadden has two others, Grains and Pasta. Both very good.
3. For Latin, The Gran Cocina Latina by Presilla is amazing.

Perfect recommendations. Only one I would add is Flour Water Salt Yeast for learning how to make levain bread and the best pizza you’ll ever make in an oven.

I’m from the uk and very old I started catering college in 1989 and 3 books we had to have I la répertoire de la cuisine (French) its only avalible in french I think Then there was practical cookery and the theory of catering look there old book practical cookery is on its 10th addition and there not easy reads but it gives you the honest recipes that will help you weather you thinking of a career in food. Or there great just to give you the basics to cook at home, there’s also a book that all chef have but will never admit it and that the queen of British cooking Delia's Complete Cookery Course: kitchen classics from the Queen of Cookery

Talking about flavor : "The Flavour Thesaurus" by Niki Segnit is my all time favourite Cook book - not only is it informative, but above all it is extremely entertaining - I read it several times from cover to cover!!
