Almond Cookies 🧧🍪 I’m so excited to eat all the good Lunar New Year food as it comes closer! Almond cookies symbolize wealth, good fortune, and prosperity, but as you guys know, I’m a fan of anything “not-too-sweet” so this recipe has no refined sugar and uses dates as the sweetener instead. Pairing almonds with carbs can reduce the immediate blood sugar spike you get post-meal compared to if you ate the carbs alone. BUT almonds don’t contribute to changes in longer-term markers like A1c. PMIDs: 17292730, 17116708, 34841609 Servings: 8 cookies Ingredients 6 pitted dates ⅓ cup almonds 100 mL soy milk 2 cups almond flour ¼ tsp cinnamon 1 Tbsp maple syrup 1 tsp baking powder ½ tsp salt 1 Tbsp olive oil 1 egg (for egg wash) 8 almonds, for pressing onto the cookie Instructions: Preheat oven to 350F. In a blender, blend the dates with almonds and soy milk until smooth. In a large mixing bowl, combine all the dry ingredients together. Then add in the almond date mixture. Knead the dough until fully combined, adding more soy milk if necessary to get the dough to stick. Line parchment paper on a 9”x13” baking sheet. Shape the dough into balls, lightly press the balls on the baking sheet, and press an almond on the middle. Brush the cookies with beaten egg wash and bake for 15 minutes. Bring the temperature up to 375F then bake for another 3-5 minutes until golden brown. Allow the cookies to cool completely before enjoying. #lunarnewyear #almondcookies #healthydessert #asiandessert
