Butter or put mayo on each piece. Put one with butter/mayo down on the skillet. Place cheese. Place other slice with butter/mayo face up. Then flip once first slice is browned.

i do mayo on the outside of the bread & butter on the inside. then cook it low & slow. it helps so much!

Omg I can’t believe I’m this early, but I used to have the same struggle. Here’s what I do now! Mayonnaise on one side of the bread, put that onto a cold pan. Turn the head to low-medium. Mayonnaise the other side while the first side is cooking. Once it’s ready, flip, and immediately add your cheeses and put a lid on the pan. Turn the heat down if necessary (sometimes on my stove medium gets to be a little too hot), and it should come out perfect!

Toast both sides. As soon as you flip the first piece out cheese on it. Then put the toasted side of the other piece down on the exposed cheese. Put a lid on it, let it toast/melt, flip it to the untoasted side of the second piece of bread, then put the lid back on while that side toasts. Bam. Grilled cheese the way I make them in a commercial kitchen 🫶🏼
