Every winter, this is one herbal preparation I make sure to have on hand! Over the years, I've learned that when it comes to respiratory wellness, it's not just about throwing a handful of herbs into a jar. It's about understanding what each plant brings to the preparation and why certain herbs work so well together. Some are known for their expectorant properties, others for soothing irritated mucous membranes, while certain botanicals contain naturally occurring substances studied for their antimicrobial and anti-inflammatory activity. And that's why I love working with herbs like elecampane and horehound. These two don't get nearly enough attention, especially considering their long history of use in respiratory herbal preparations. Making this honey has become part of my winter routine, right alongside stocking my herbal pantry and preparing for the colder months. A little herbal reminder: This is a personal herbal preparation, not a replacement for medical care or prescribed antibiotics. Fresh garlic and onion introduce moisture, so this honey should be refrigerated and isn't shelf-stable. Ingredients 250-300 g Raw honey 30 g red onion, chopped 3 g Dried thyme 2 g Dried peppermint 2 g Dried ginger root 1 g Dried elecampane root 1 g Dried horehound 4 cloves, crushed 2 garlic cloves, crushed ½ small Ceylon cinnamon stick, ≈ 1 g Safety Notes • Fresh garlic and onion add moisture to honey, increasing the risk of microbial growth and fermentation, especially with prolonged steeping or fluctuating temperatures. Keep refrigerated. • Never give honey to children under 12 months due to the risk of infant botulism. Avoid during pregnancy or breastfeeding unless cleared by a qualified healthcare professional. Horehound is particularly unsuitable during pregnancy. • Elecampane may cause allergic reactions in individuals sensitive to plants in the daisy family (Asteraceae). • Garlic and ginger may increase bleeding risk, particularly with anticoagulant or antiplatelet medications.
