I'm from Pennsylvania and Hamloaf is my favorite!! We use rice crispys instead of breadcrumbs and it makes it less dense. Yours looks really good though!

Old folks love that stuff. I worked at a grocery store that made it to take home and bake, and it always sold.

There is an Amish restaurant in our area that serve honey glazed meatballs on their buffet. It’s very ham loafy but is more individual servings. That pan is always getting refilled! I wondered if that would be a good idea for your restaurant.

Corn flakes instead of bread crumbs! Add mustard powder to the mix too, Then at the bottom of the pan mix crushed pineapple and brown sugar to the bottom and bake it like a pineapple upside down cake
