My Second Headbop Animation - Megumi Headbop Animation #megumi #headbop #animation
baby’s first smash cake🎂✨🍓 I cannot believe my baby girl is going to be one in a few days. truly the fastest and most beautiful year of my life. I knew from the beginning I wanted to make her a smash cake for her first birthday with no added sugar. I pretty much adapted my banana muffin recipe to work in 4” cake pans and frosted it with some greek yogurt and peanut butter. and she absolutely loved it! ingredients: 3 bananas, mashed 3 eggs 1/2 cup whole milk greek yogurt (or unsweetened apple sauce for dairy free) 1 cup oat flour 3/4 cup almond flour 1 tsp baking powder sprinkle of cinnamon For the frosting: 1 cup plain greek yogurt (I had best results with Fage 5%!) 2 tablespoons peanut butter (check labels for 100% peanuts as the ingredients) Instructions: Preheat the oven to 350F. In a large mixing bowl, mash the banana, then whisk in eggs and greek yogurt. Next, fold in the oat flour, almond flour, baking powder, and cinnamon. Grease three 4-inch cake pans with avocado oil or cooking spray. Line each pan with cut parchment paper to fit the bottom of the pan. Portion into three equal pans and bake for 15-20 minutes or until a toothpick comes out clean. While those bake, make the frosting. In a mixing bowl, whip together plain greek yogurt and peanut butter using a hand or stand mixer. Whip for about 2-3 minutes or until fluffy and combined. Once cake layers cool, carefully slice off any domed/rounded tops on each cake layer to create a flat surface. Add frosting to a piping bag (or ziplock bag) and snip the corner. Pipe frosting between each layer and on top. Top with a large strawberry, candle, or fruit of choice. Then let baby dig in!❤️ Store the whole cake in the fridge until ready to use (as the frosting is partially yogurt it needs to remain cold!) For nut free, use equal parts oat flour in replace of almond flour (may be slightly less fluffy). In replace of peanut butter, use sunflower seed butter.
