Blend red and green peppers with garlic, ginger, onion, black pepper, sea salt, and a little oil. Rub the seasoning generously over the fish, cover, and allow the flavours to soak in. Grill over charcoal, brushing with seasoned oil and turning until cooked through and beautifully golden. 🍌 Fried Plantain: Peel and cut the plantain into thick slices. Fry in hot cooking oil until golden and cooked through, then drain. 🌶️ Pepper Sauce: Grind fresh red peppers with chopped onion and salt in a traditional asanka.
