Instructions 1. Line a tray with clean paper towels or a kitchen towel, arrange the 1-inch tofu cubes in a single layer, place a cutting board or flat plate on top, and let rest for 15 minutes to press out excess internal water. 2. Pat the pressed tofu cubes completely dry on all sides with a fresh dry paper towel. 3. In a small bowl, thoroughly whisk together the mayonnaise, liver spread, calamansi juice, light soy sauce, liquid seasoning, and black pepper until silky smooth, then set aside at room temperature. 4. Set up two shallow bowls side by side: in bowl 1, whisk 1/3 cup of Knorr Crispy Breading Mix with 1/4 cup of ice-cold water to make a smooth, light wet batter; in bowl 2, place the remaining 2/3 cup of dry Knorr Crispy Breading Mix. 5. Dip a batch of tofu cubes into the wet batter, let the excess drip off, then immediately drop them into the dry breading mix and roll generously, pressing lightly with dry hands so craggy edges cling to every flat side. 6. Pour about 1/2 to 3/4 inch of cooking oil into a wide skillet or pan and heat over medium heat until it reaches 175°C (a pinch of dry breading dropped in will sizzle instantly). 7. Lay the breaded tofu cubes gently into the oil in a single layer without crowding the pan. 8. Fry undisturbed for 2 to 3 minutes until the bottom side turns rigid and golden brown, then flip and fry the remaining sides for another 2 to 3 minutes until all faces are deep golden and audibly hard. 9. Transfer the fried cubes to a wire cooling rack and rest for 90 seconds so the CrispLock™ coating sets completely. 10. Arrange the hot cubes on a wooden platter or shallow bowl, perform your audio crunch check on camera, drizzle generously with the savory cream sauce, spoon the crunchy chili garlic oil over each mound, and scatter chopped green onions across the top.
