@brighteyes847: Grandma's Old-Fashioned Christmas Fruitcake Recipe- COOKING WITH BRIGHT EYES This buttery Christmas fruitcake is loaded with jewel-like candied cherries, plump raisins, crunchy pecans, and warm spices. Yield: 1 loaf cake (23 x 13 cm loaf pan) Prep time: 20 minutes Bake time: 65 - 80 minutes Oven temperature: 160°C (fan 150°C) or 325°F / Gas Mark 3 Ingredients: - Cake flour, sifted: 250 g (500 ml / 2 cups) - Unsalted butter, softened: 115 g (125 ml / 1/2 cup) - Brown sugar, packed: 150 g (180 ml / 3/4 cup) - Large eggs, at room temperature: 3 - Orange juice: 125 ml (1/2 cup) - Vanilla extract: 5 ml (1 teaspoon) - Baking powder: 5 ml (1 teaspoon) - Ground cinnamon: 5 ml (1 teaspoon) - Ground nutmeg: 1.25 ml (1/4 teaspoon) - Salt: 1.25 ml (1/4 teaspoon) - Raisins: 150 g (250 ml / 1 cup) - Candied cherries, chopped: 150 g (250 ml / 1 cup) - Pecan nuts, chopped: 60 g (125 ml / 1/2 cup) - Cake flour extra, for coating fruit: 15 ml (1 tablespoon) Method: 1. Preheat oven to 160°C. Grease a 23 x 13 cm loaf pan and line with baking paper. 2. In a small bowl, toss the raisins, candied cherries and pecans with the 15 ml extra flour. Set aside. 3. In a large bowl, cream the softened butter and brown sugar until light and fluffy. 4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. 5. In a separate bowl, whisk together the 250 g flour, baking powder, cinnamon, nutmeg and salt. 6. Add the dry ingredients to the butter mixture alternately with the orange juice. Mix just until combined, do not overmix. 7. Fold in the flour-coated raisins, cherries and pecans. 8. Spoon the batter into the prepared loaf pan and smooth the top. 9. Bake for 65 to 80 minutes, until a skewer inserted into the centre comes out clean. If the top browns too quickly, cover loosely with foil. 10. Allow to cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely. 11. For best flavour, wrap the cooled cake in foil and let it rest overnight before slicing. Grandma's tip: Serve thick slices with hot coffee or tea. For a festive finish, decorate the top with a few extra candied cherries and pecan halves before baking. (I like to make mine in advance and put a cheesecloth in the center with rum until it infuses into the cake) Let sit in a dark cool area...
