Tomato Burrata Pasta Salad Ingredients: Serves 4 500g (1 lb) pasta of choice 500g (1 lb) cherry tomatoes (or ripe regular tomatoes, chopped) 220g (8 oz) burrata large Handful of fresh basil, torn 1 spring onion, finely sliced 1 garlic clove, minced 1/4 cup balsamic vinegar 1/4 cup olive oil Method 1/ Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool completely. 2/ Meanwhile, make the dressing. In a large bowl, combine the chopped tomatoes, minced garlic, spring onion, balsamic vinegar, olive oil, salt and pepper. 3/ Using the back of a spoon or a potato masher, gently crush the tomatoes to release as much of their juice as possible. Let the mixture sit for 10 minutes so the tomatoes create their own dressing. 4/ Add the cooled pasta and toss until every piece is coated in the tomato juices and dressing. Tear in the basil and burrata and gently fold everything together. Taste and adjust the seasoning if needed before serving. #pastasalad #EasyRecipes #familymeals #vegetarian #healthydinner
