Japanese knives - look for a Zwilling “pop up”. I accidentally found one and we bought two of the knives you showed. The 8” was $100 and the 10” was $130. We bought both as gifts. They’re beautiful. If you can find a pop up - go EARLY because we got the LAST 8” one. Now I’m questioning maybe they were 6” and 8”. It’s the most standard sized ones. Anyway! Hopefully you get what I’m saying! Great list!
