In a large bowl, mash the bananas until smooth. Add the melted butter and mix, then add the Greek yogurt, egg, and vanilla paste, mixing until well combined. Add the granulated sugar and brown sugar and mix until smooth. Add the flour, cocoa powder, espresso powder, baking soda, and salt, and gently mix until just combined, being careful not to overmix. Fold in the chocolate chips, then pour the batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the banana bread to cool completely before decorating. To make the pistachio kataifi topping, melt the butter in a pan over medium heat, add the chopped kataifi, and cook until golden and crispy. Remove from the heat and stir in the pistachio cream until well combined. Spread the pistachio kataifi over the top of the completely cooled banana bread. Melt the chocolate chips with the coconut oil until smooth, then drizzle over the pistachio topping.
