@pocketsnpeonies: Keto Apple Cider Donuts Prep: 15 min | Cook: 15 min | Total: ~35 min | Makes: 6 donuts 3/4 cup apple cider (no sugar added) • 1 1/4 cups almond flour • 2 Tbsp coconut flour • 1/3 cup granulated monk fruit/erythritol • 1 tsp baking powder • 1 tsp cinnamon • 1/4 tsp nutmeg • pinch of allspice (optional) • 1/4 tsp salt • 2 eggs • 1/4 cup butter, melted • 1 tsp vanilla • 1/2 tsp apple extract (optional) Coating: 2 Tbsp butter, melted • 1/4 cup granulated monk fruit/erythritol • 1 1/2 tsp cinnamon 1) Simmer the cider down to about 1/4 cup, 10–12 min, and let it cool a bit. 2) Heat oven to 350°F; grease a donut pan well. 3) Whisk the dry ingredients in one bowl, the eggs, butter, reduced cider, vanilla and apple extract in another; stir together until just combined. 4) Spoon or pipe into the wells, 3/4 full. 5) Bake 14–16 min until the tops spring back. Rest 5 min, turn out onto a rack. 6) While warm, brush with melted butter and roll in the cinnamon-sweetener until coated all over. Chef's Tip: Reducing the cider is the whole trick — it concentrates all that orchard flavor into a few spoonfuls, so the donuts taste like the fair without the sugar of a full cup of cider. And coat them warm: that's when the cinnamon "sugar" grabs on and stays, just like the ones in the paper bag.
