Miso Tomato Tofu Meatballs with Rice & Green Vegetables Ingredients (serves 4) For the tofu meatballs 900 g (2 blocks) extra-firm tofu 5-6 scallions, finely chopped 3 garlic cloves, minced 3 tbsp tomato purée 3 tbsp white miso 1/2 cup (60 g) all-purpose flour For the sauce 1/4 cup (60 ml) soy sauce 3 tbsp honey 2 tbsp vinegar 3-4 tbsp water To serve 300 g (1 1/2cups) uncooked rice 250-300 g (9-10 oz) snow peas or green beans Lime wedges Method: 1/ Cook the rice. Prepare the rice according to the package instructions. For four people, use about 300 g (1 1/2 cups) uncooked rice. 2/ Drain the tofu and crumble it into a large bowl. Add the chopped scallions, minced garlic, miso, tomato purée, flour, salt, and pepper. Mix everything together with your hands until well combined. Shape the meatballs. Form the mixture into small, firm balls. If the mixture feels too wet to hold its shape, add a little more flour. 3/ Cook the meatballs. Heat a drizzle of olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning gently so they brown on all sides. Transfer each batch to a plate as it finishes. When cooking the final batch of meatballs, add the snow peas or green beans to the pan. Cook for 3-5 minutes, until tender but still slightly crisp. 4/ Make the sauce. Whisk together the soy sauce, honey, vinegar, and water in a small bowl. Pour over the meatballs and vegetables, tossing gently to coat. Let the sauce bubble for a minute or two until slightly thickened. Serve. Spoon the rice into bowls and top with the tofu meatballs and vegetables. Finish with a squeeze of fresh lime and extra sauce. #tofu #EasyRecipe #vegetarian #familymeals #easydinner
