Just to note the word hummus translates literally to the word chickpea in Arabic. 😁 I’d just call this a bean dip since there isn’t a chickpea.

I understand the use of potatoes. In Tuscany we use cannellini and they are softer so you don’t need the potatoes to soften it. Still looks delish though!
