🫘 Random Dinner Budget 2 ($9): Red Beans and Rice Creamy Louisiana red beans with smoky andouille sausage, made on a $9 budget. Go to my Substack with all the pictures, tips & tricks to help you make this! ⏰ Prep: 15 minutes | 🫘 Soak: Overnight | 🍳 Cook: 3–4 hours 🍚 Serves: 4–6 🍴 Ingredients * 1 lb dry red beans * Andouille sausage, sliced * Frozen trinity blend (onion, celery, bell pepper) * 4 cloves garlic, minced * Tony Chachere’s, to taste * 8 cups water, plus more as needed * Hot cooked rice, for serving * 1 bay leaf, optional * Salt, for soaking 👩‍🍳 Steps 1️⃣ Soak the beans Rinse the beans, cover with salted water, and soak overnight. Drain before cooking. 2️⃣ Brown the sausage Brown the andouille in a large pot over medium heat. Remove and set aside, leaving the drippings. 3️⃣ Cook the trinity Add the frozen trinity and cook until softened. Stir in the garlic and cook for another 30 seconds. 4️⃣ Season & simmer Add Tony’s, the beans, bay leaf, and enough water to cover. Bring to a simmer and cook uncovered for 2–3 hours, stirring occasionally, until creamy and tender. 5️⃣ Mash & finish With about 45 minutes left, mash roughly 20% of the beans against the side of the pot. Stir in the sausage and simmer for another 45 minutes, adding water if needed. 6️⃣ Serve Taste and adjust the seasoning, remove the bay leaf, and serve over hot rice! And I say use a bigger bowl because the beans sometimes get out the bowl, so I just like to prepare!! Inspo: @King Kev #budget #challenge
