Pickled Ginger Ingredients: - 1/2 lb fresh ginger, peeled and thinly sliced - 1 cup rice vinegar (preferably unseasoned) - 1/4 cup water - 3 tbsp granulated sugar - 1 tbsp salt Instructions: 1. Wash the fresh ginger thoroughly under cold running water to remove dirt and impurities. 2. Peel the ginger using the edge of a spoon or a vegetable peeler, removing only the thin outer skin. 3. Using a mandoline slicer or very sharp knife, slice the ginger into extremely thin, even pieces. The thinner the slices, the more tender the finished pickled ginger will be. 4. Place the sliced ginger in a medium mixing bowl and sprinkle with approximately 1 teaspoon of the measured salt. 5. Gently toss the ginger until evenly coated, then allow it to rest for 15–20 minutes to draw out some moisture and soften its strong flavor. 6. Bring a medium saucepan of water to a boil over medium-high heat. 7. Add the ginger slices and blanch for 1–2 minutes for a stronger ginger flavor, or 3–5 minutes for a milder taste. 8. Drain the ginger thoroughly and gently squeeze out excess moisture once cool enough to handle. 9. Transfer the blanched ginger into clean glass jars or heat-safe food containers. 10. In a separate saucepan, combine the rice vinegar, 1/4 cup water, granulated sugar, and the remaining salt. 11. Heat the mixture over medium heat, stirring until the sugar and salt dissolve completely. 12. Bring the pickling liquid to a gentle simmer for approximately 1–2 minutes, then remove it from the heat. 13. Carefully pour the hot vinegar mixture over the ginger slices, ensuring they are completely submerged. 14. Gently press down the ginger with a clean spoon to remove trapped air bubbles. 15. Allow the jars to cool briefly, then cover tightly and refrigerate promptly. 16. Refrigerate the pickled ginger for at least 24 hours before serving to allow the flavors to develop. 17. For the best balance of sweetness, acidity, and ginger flavor, allow the ginger to marinate for 2–3 days. 18. During refrigeration, young ginger may naturally develop a delicate pale pink color. Mature ginger generally remains pale yellow unless naturally colored ingredients are added. 19. Once fully marinated, remove the desired amount using clean utensils. 20. Serve chilled alongside sushi rolls, sashimi, rice bowls, teriyaki chicken, grilled fish, noodles, or your favorite Asian-inspired dishes. Prep Time: 15 minutes Salting Time: 15–20 minutes Cook Time: 5–10 minutes Pickling Time: 24–72 hours Total Time: Approximately 40–45 minutes, plus refrigeration Yield: Approximately 1–2 cups, depending on ginger thickness Servings: 12–16 Storage: Keep refrigerated in an airtight glass container at 40°F (4°C) or below and use within 2–3 weeks for the best quality. Always use clean utensils and keep the ginger submerged in its brine. Tip: For beautiful, naturally pink pickled ginger, use very young ginger with pink-tipped stems. Young ginger is also more tender, less fibrous, and naturally milder than mature ginger. Important: This recipe is intended for refrigerator pickling only. It has not been validated for shelf-stable home canning, so keep it refrigerated and do not store it at room temperature. #pickled #pickledginger #homemade #EasyRecipe
