🥩🔥 Texas-Style Low & Slow Smoked Beef Brisket with a Dark Peppery Bark 🌳🔥 This incredible smoked beef brisket is cooked low and slow until it develops a beautifully dark, crispy bark and a tender, juicy interior. 🥩🔥 Every slice reveals rich beefy flavor, a gorgeous smoky pink ring, and perfectly rendered fat that melts into the meat. Seasoned with a bold blend of coarse black pepper, kosher salt, garlic, and smoky spices, this mouthwatering brisket delivers authentic Texas-style barbecue flavor in every bite. Smoked for hours over fragrant hardwood until perfectly tender, it's the ultimate centerpiece for a backyard BBQ, family gathering, or unforgettable barbecue feast! 🤤✨ Half Recipe 1 whole beef brisket, approximately 5–7 lbs (2.3–3.2 kg) 2 tbsp coarse kosher salt 2 tbsp freshly cracked black pepper 1 tbsp garlic powder 1 tbsp onion powder 2 tsp smoked paprika 1 tsp chili powder 1 tsp mustard powder 1 tbsp brown sugar (optional) 2 tbsp yellow mustard (for binder) ½ cup beef broth or water (for spritzing) 2 tbsp apple cider vinegar Hardwood chunks or pellets, preferably oak, hickory, or pecan Trim the brisket, removing excessive hard fat while leaving approximately ¼ inch of fat cap to protect the meat during the long smoking process. Remove any loose pieces of meat and excess silver skin, creating an even shape for consistent cooking. Pat the brisket completely dry with paper towels. Apply a thin, even coating of yellow mustard over the entire surface to help the seasoning adhere. The mustard will not overpower the finished flavor. In a small bowl, combine kosher salt, freshly cracked black pepper, garlic powder, onion powder, smoked paprika, chili powder, mustard powder, and optional brown sugar. Mix thoroughly. Generously coat every side of the brisket with the seasoning mixture, pressing the rub gently into the meat to create an even layer. Make sure the edges and sides are seasoned as well. Prepare a smoker and preheat it to approximately 225–250°F (107–121°C). Add oak, hickory, or pecan wood chunks to create a steady flow of clean, flavorful smoke. Place the brisket directly on the smoker grate with the fat cap positioned according to your smoker's heat source. Insert a reliable meat thermometer into the thickest portion of the flat. Close the smoker and allow the brisket to cook slowly. Maintain a consistent temperature and avoid opening the lid unnecessarily. The meat will gradually absorb the wood smoke while its exterior develops a deep mahogany color and flavorful bark. After the first few hours, lightly spritz the brisket with a mixture of beef broth and apple cider vinegar whenever the surface looks dry. Avoid spraying too frequently, as the bark needs time to develop and set. Continue smoking until the brisket reaches the stall, typically around 160–175°F (71–79°C). At this stage, the internal temperature may stop rising temporarily as moisture evaporates from the surface. Once the bark is dark, firm, and well established, wrap the brisket tightly in unwaxed butcher paper or aluminum foil. Return it to the smoker and continue cooking at approximately 250°F (121°C). Cook until the thickest portions become probe-tender, generally around 195–205°F (91–96°C). Temperature is a guide rather than the only indicator; a thermometer probe should slide into the meat with very little resistance. Remove the brisket from the smoker and allow it to rest while still wrapped. Rest for at least 1 hour, preferably 2–3 hours in a temperature-controlled insulated holding environment. This allows the juices to redistribute and the meat to relax. Want the full recipe? Comment "RECIPE" below. 👇 #SmokedBrisket #TexasBrisket #BeefBrisket #LowAndSlowBBQ #SmokedMeat
