Chopped onion and a seasoned soft-boiled egg 【Binbintei Kabe】 We visited Binbintei Kabe in Ome, Tokyo, to film. We’re featuring the standard ramen with an added seasoned egg. Pork, seafood, vegetables and fruit are slow-simmered for the broth, then mixed with house-made soy sauce seasoning and lard. The soy sauce flavor is clear, with richness from the lard. Large noodle portions are free. Broth clings to the thin, straight noodles with a firm bite. Toppings include chashu pork, thinly sliced bamboo shoots, chopped onion and nori. Onions direct from Hokkaido farmers add crisp texture and sweetness. The added egg is well seasoned, with a moist yolk and a soft, runny center. Vinegar, grated garlic and black pepper on the counter let you adjust the flavor as you eat. The shop is on Okutama Kaido, about a 10-minute walk from Kabe Station’s south exit on the JR Ome Line.
