Authentic Mutton Kabsa 🍖🍚 | Arabian-Style One-Pot Rice Ingredients For the Mutton & Masala - ½ kg bone-in mutton - 2 cups basmati rice, soaked for 20–30 minutes - ½ cup oil - 1 large onion, chopped - 1 tbsp ginger-garlic paste - 1 chopped tomato - 2 tbsp tomato paste - 2 dried lemons (loomi) - 3–4 cloves - 3–5 green cardamoms - 2 black cardamoms - 1 cinnamon stick - 2 bay leaves - 1 tbsp red chilli powder - 1 tbsp coriander powder - 1 tsp turmeric powder - 1 tsp cumin powder - 1 tsp black pepper powder - Salt to taste - 4 cups water, for cooking the mutton - 2 green chillies - 2 dried red chillies - ½ whole garlic bulb For Garnishing - Sliced almonds - Fresh coriander. Instructions 1. Heat oil in a pressure cooker and fry the chopped onion until golden brown. 2. Add dried lemons, cloves, green cardamoms, black cardamoms, cinnamon stick, and bay leaves. Sauté briefly. 3. Add ginger-garlic paste and sauté until fragrant. 4. Add the bone-in mutton and cook until its colour changes. 5. Add the chopped tomato, tomato paste, red chilli powder, coriander powder, turmeric, cumin powder, black pepper, and salt. Mix well and cook until the spices are fragrant. 6. Pour in 4 cups of water, close the pressure cooker, and cook for 20 minutes after pressure builds. Allow the pressure to release safely and check that the mutton is tender. 7. Add the soaked and drained rice to the mutton and stock. Adjust the salt and check that the liquid level is suitable for cooking the rice. 8. Once most of the excess liquid has reduced, add green chillies, dried red chillies, and half a whole garlic bulb. 9. Close the pressure cooker and cook on low heat for another 7 minutes after pressure builds, provided this timing suits your cooker and rice variety. Turn off the heat and allow the pressure to release naturally before opening. 10. Transfer to a serving platter and garnish with sliced almonds and fresh coriander. Serve hot with homemade Dakoos and enjoy this delicious Mutton Kabsa! ❤️ #MuttonKabsa #KabsaRice #MuttonRice #ArabianFood #SaudiFood
