Replying to @airaza rice & peas 🇯🇲🍚🫘 you guys have been asking for this one, so here it is…definitely one of the best rice dishes you’ll try 😮‍💨 Ingredients 300g basmati rice 1 onion 4-6 cloves garlic 1 spring onion 1 tin (400g) kidney beans 1 tin (400ml) coconut milk 4 sprigs thyme 1 scotch bonnet 2 tbsp all-spice/pimento 1/2 tsp salt (add more if needed) 1/2 tsp pepper 1 tbsp chicken stock powder/all-purpose seasoning 1 tbsp butter Recipe 1. Prepare the vegetables by dicing the onion and chopping the spring onion in half 2. Wash the rice until the water runs clear 3. Add the tin of kidney beans into a pot 4. Fill up half the tin with water and pour that into the pot 5. Add in the onion, garlic, spring onion, thyme and scotch bonnet 6. Mix then add some all-spice powder or pimento seeds 7. Pour a tin of coconut milk into the mixture, mix and bring to a boil 8. Season with salt, pepper and some chicken stock powder and/or all purpose seasoning 9. Introduce the washed rice into the pot, mix then add a little butter 10. Bring the heat down to low, cover the pot with foil and allow to simmer for around 18-20 mins 11. Fluff the rice, checking that the liquid has evaporated and cover again for another 5 minutes if necessary 12. Serve optionally with chicken or whatever you like 13.
