Good try but al pastor needs to be roasted in the trompo. If you bake it you created a different recipe. To cook pastor tacos is difficult, that why in taquerias there will be only one person in charge of pastor. They need to keep roasting the meet, turn it around, avoid overcook but at some point roast before cut a thin slice.

In Mexico, when tortillas puff up while cooking, it's customary to say: "Ya te puedes casar" (Now you're ready to get married!). It's a playful traditional expression that celebrates knowing how to make tortillas properly. Getting them to puff up is considered a sign that you've mastered the technique.

The pastor Cooks in the fire, not in the oven, you cut tiny slices and then the fire cooks again the meat until you finish the trompo, that’s why the meat seems rare after you cut the first time

I miss this SM! 😭😭😭 I’m soo allergic to pineapple😭
If your taqueria doesn’t have a trumpo… it’s not a real taqueria… and if they don’t make your al pastor by flicking a piece of pineapple off the top with a knife and catch it in the taco… don’t eat it
