@provisionist_lab: THE GUACAMOLES OF MEXICO 🇲🇽 EP 10 — MICHOACÁN 🌽 Michoacán is home to one of Mexico’s richest culinary traditions, deeply rooted in the heritage of the Purépecha people. For centuries, corn, chiles, and native ingredients have formed the foundation of the region’s cuisine, with traditional cooking techniques passed down through generations. For this episode, we’re preparing our Michoacán guacamole in the molcajete, combining fire-roasted corn, charred serrano peppers, and chile manzano. The roasted corn brings sweetness, while the chile manzano adds a distinctive fruity heat. Fresh white onion, cilantro, and lime bring everything together. Recipe: 3 ripe avocados 1 ear of corn, fire-roasted 3 serrano peppers, charred and peeled 1 chile manzano, finely diced 3 garlic cloves White onion, finely diced Fresh cilantro, chopped Fresh lime juice Salt to taste Preparation: 1. Fire-roast the corn and serrano peppers until lightly charred. Peel the serranos and remove the corn kernels from the cob. 2. In a molcajete, grind three garlic cloves with salt until a smooth paste forms. 3. Add the three charred serrano peppers and grind them into the garlic paste. 4. Add three ripe avocados and mash to your preferred consistency. 5. Incorporate the fresh lime juice, roasted corn, finely diced chile manzano, and white onion. 6. Finish with freshly chopped cilantro and gently mix everything together. Do you think charred corn belongs in guacamole? 🌽🥑 Which region of Mexico should we explore next? 🇲🇽 #guacamole #michoacán #mexicanfood #foodreels @Northgate Market @WÜSTHOF

This is not true! In Michoacan, we do not put corn in the guacamole, no garlic either
