🇻🇳 thank you, vietnam, for giving us such a wonderful culinary staple: rice paper! ❤️ fun fact: rice paper, or bánh tráng, has been made in vietnamese villages for generations, traditionally using rice batter that’s steamed into thin sheets and dried in the sun. and one of the most beloved ways to enjoy it is gỏi cuốn, vietnamese fresh spring rolls! since i’m on a mission to turn rice paper into 100 different recipes, it only felt right to celebrate the vietnamese classic that inspired this entire series. here’s my homemade version, using what i already had in my kitchen! 🇻🇳 my version of vietnamese fresh spring rolls ingredients: * rice paper wrapper * lettuce * rice vermicelli noodles * carrots, thinly sliced * fresh mint leaves * shrimp * green onions for my quick peanut sauce: * hoisin sauce * garlic minced * peanut butter * water, to thin how i made it: 1. boil the shrimp until fully cooked, then set aside to cool. 2. cook the vermicelli noodles according to the package instructions until soft. drain and let cool. 3. briefly dip the rice paper in water to soften. 4. layer the lettuce, vermicelli, carrots, and mint leaves. 5. start rolling, folding in the sides as you go. add the shrimp toward the end of the roll so they’re visible through the rice paper, along with the green onion. 6. continue rolling until everything is wrapped! for the peanut sauce: i simply mixed hoisin sauce, garlic, peanut butter, and a little water until smooth and creamy. this is my pantry-friendly version of the dipping sauce, not a traditional recipe. feel free to adjust it to your taste! so much love and appreciation for vietnamese cuisine and the inspiration behind my rice paper experiments. ❤️🇻🇳 13 experiments down, 87 more to go! #EasyRecipes #vietnamesefood #ricepaper #springrolls #homecooking
