First of all, that insect is NOT a cockroach. It is a water beetle (known in Chinese as 龙虱), a traditional edible insect used in Guangdong cuisine in southern China. It is a completely different species from a cockroach and has been consumed as food in certain regions of China for generations. Water beetles are traditionally prepared as food, including deep-frying, and are valued for their distinctive flavor and crunchy texture. Comparing them to cockroaches is misleading.
