I shared this recipe last year and apparently none of us ever moved on 😭 My high protein marry me chicken orzo is BACK and honestly… it deserved another moment. Creamy, rich, comforting, ridiculously easy and packed with 50g protein per serving😮‍💨😮‍💨😮‍💨 Tracking it on the Kalo app reminded me why this recipe became such a favourite in the first place — high protein meals do 👏🏻not 👏🏻need to be boring 📌RECIPE BELOW - serves 3-4 Gather 3 tbsp oil (recommend using the oil from the jar of sundried tomatoes) 1 red onion, finely chopped 100g sundried tomatoes, finely chopped 2 garlic cloves, grated 1 heaped tsp paprika 2 heaped tsp dried oregano 50g tomato puree 600g boneless chicken thighs, diced 300g orzo 300g full fat cottage cheese 500ml veg stock (plus extra if needed) Salt and pepper to taste Approx 50g Parmesan cheese, grated Handful of fresh basil chopped Method 1.) To a frying pan, add the oil and place over a medium heat. After a minute, add the chopped red onion and sauté for 2-3 minutes until softened, making sure to continuously stir. 2.) Add the seasonings, tomato puree and grated garlic, and sundried tomatoes, and stir through for a minute before adding the diced chicken to the pan and cook for 5 minutes or until the chicken has turned white. 3.) Add the orzo, cottage cheese, stock, and mix until combined. Lower the heat and cover the saucepan with a lid. Cook for 12-15 minutes, stirring regularly. 4.) Once the liquid has reduced, remove the lid and stir through the grated Parmesan cheese and fresh basil. Cook for a further minute before serving. #EasyRecipe #highprotein #orzo
