• 2 medium sweet potatoes
• 2 tbsp butter
• 2 tbsp packed brown sugar
• ½ tsp ground cinnamon
• Pinch of salt
• 2 tbsp chopped pecans
Instructions
1. Heat oven to 425°F. Scrub and dry the sweet potatoes. Pierce each several times with a fork.
2. Place on a foil-lined baking tray to catch drips. Bake uncovered for 45–60 minutes, until completely tender. Larger sweet potatoes may take longer.
3. Split lengthwise and fluff the flesh with a fork.
4. Divide the butter, brown sugar, cinnamon and salt evenly between the two potatoes. Gently mix into the hot flesh until the butter melts.
5. Sprinkle with chopped pecans and serve warm.
Helpful tip: Both varieties can bake in the same oven. Check them separately and remove each potato when tender.
