Olive Oil Cake with Brown Butter Frosting 🍋🍊 After attempting to make my own olive oil from scratch using 20 pounds of fresh olives, I can officially say it was one of the most difficult things I’ve ever attempted in the kitchen! Ingredients For the Olive Oil Cake 1½ cups extra virgin olive oil 3 large eggs 1¼ cups whole milk Zest and juice of 1 lemon Zest of 1 large orange 1¾ cups granulated sugar 2 cups all-purpose flour 1 teaspoon salt ½ teaspoon baking powder ½ teaspoon baking soda For the Brown Butter Frosting 1 cup unsalted butter 3 cups powdered sugar 1 teaspoon vanilla extract 2-3 tablespoons whole milk For the Olive Oil Cake Preheat your oven to 350°F. Grease a springform pan and line the bottom with parchment paper. Place the pan on a cookie sheet. In a large mixing bowl, combine the olive oil, eggs, whole milk, lemon zest, lemon juice, and orange zest. Mix until well combined. In a separate bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Pour the batter into your prepared springform pan. 9 & 1/4 inch round. Bake at 350°F for approximately 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before frosting. For the Brown Butter Frosting Add the butter to a saucepan over medium heat. Allow the butter to melt. Continue cooking until the butter becomes golden brown and develops a nutty aroma. Remove from the heat and allow the brown butter to cool by placing in the refrigerator for 15-20 minutes or until softened but no longer liquid. In a mixing bowl, beat the cooled brown butter with the powdered sugar and vanilla extract. Gradually add the whole milk until the frosting reaches your desired consistency. Spread the frosting over the completely cooled olive oil cake. Enjoy! #oliveoil #cake #dessert #Recipe #olives
