@kaitsplatess: QUICHE LORRAINE 🥓🧀 the easiest brunch that looks way more impressive than it actually is, and yes, cooking the onions in the leftover bacon fat is THE secret. save this for your next brunch!! • CRUST: • 1 frozen pie crust FILLING: • 4 strips bacon • 1 small yellow onion • ¾ to 1 cup grated comté cheese • olive oil CUSTARD: • 4 eggs • 1 cup heavy cream • salt & pepper, to taste • nutmeg, to taste • 1. Heat oven to 375°F. Poke the pie crust with a fork and bake for 10 minutes. 2. Pan fry the bacon until crispy, about 10-12 minutes. Drain on a paper towel lined plate, dice into bits, and set aside. Don't wash the pan yet! 3. Dice the onion and sauté in the leftover bacon fat until translucent and slightly browning. 4. In a medium bowl, whisk the eggs, heavy cream, salt, pepper, and nutmeg. 5. Fill the crust with the bacon, comté, and onions, then pour the custard over, keeping it just below the edge. 6. Bake for 40-50 minutes, until fully cooked through.
