@cooking.with.brig: Replying to @buckweatnoodles The Trader Joe’s dinner that practically makes itself… TERIYAKI edition! 🍚 TRADER JOE’S TERIYAKI CHICKEN & RICE BAKE Part 4 of my Trader Joe’s dinners that practically make themselves! 🤍 Ingredients: * 1 lb boneless, skinless chicken thighs * 1½ cups uncooked jasmine rice * 1 cup Trader Joe’s Soyaki Teriyaki Sauce * 2½ cups chicken broth * ½ red onion, thinly sliced * 1 red bell pepper, thinly sliced * Sliced mushrooms * Green beans, trimmed and cut in half (about half a Trader Joe’s bag) * ½ tsp salt * 1 tsp garlic powder * ¼ tsp black pepper * Olive oil, for greasing Instructions: 1. Preheat oven to 400°F and lightly grease a 9x13 baking dish with olive oil. 2. Pat chicken thighs dry and season both sides with salt, garlic powder, and black pepper. 3. Add uncooked jasmine rice, Soyaki sauce, chicken broth, red onion, bell pepper, and mushrooms to the prepared baking dish. Stir to combine. 4. Nestle the seasoned chicken thighs into the rice mixture. Cover tightly with aluminum foil and bake for 30–35 minutes. 5. Remove from the oven and give the rice and vegetables a really good stir. Add the halved green beans, cover tightly again, and return to the oven for an additional 15–25 minutes. 6. The chicken should reach at least 175°F, the liquid should be fully absorbed, and the rice should be tender. NOTE: If your rice isn't quite tender, give everything another stir, cover tightly, and bake for an additional 10 minutes. Every oven cooks a little differently! One dish, a handful of Trader Joe’s ingredients, and dinner practically makes itself! 🙌🏼 SAVE this one for your next busy weeknight & FOLLOW for more insanely easy Trader Joe’s dinners! 🤍 #traderjoesr#traderjoesrecipesd#traderjoesdinneri#easydinneridease#onepandinnerrice

Stephanie Golemb :
I made a recipe similar to this and the chicken had a horrible texture like slimey rubber. I would cook it separately in a pan first.

That chicken looks sad and pale. Maybe brown it a bit first.
