Cheese is high in saturated fat, yet it may affect cholesterol differently than butter. One possible explanation is the cheese matrix—the structure of cheese and how its nutrients interact during digestion. In a randomized trial, full-fat cheese lowered LDL cholesterol more than reduced-fat cheese supplemented with butter, despite similar amounts of saturated fat, protein, and calories. Another study found that people eating cheese excreted more fat in their stool than those eating butter, suggesting that cheese may reduce fat absorption. Calcium, proteins, and other components of the cheese matrix may help explain this effect. Many variables remain unknown - this is important to acknowledge. Results aren’t perfectly consistent, but overall they suggest that a food’s saturated-fat content doesn’t fully predict its cardiovascular effects. How to Use This: Cheese can fit into a heart-healthy diet, but more isn’t necessarily better. Potential benefits may level off around 50 grams per day. Want to know how the milk fat globule membrane may affect cholesterol, whether milk behaves similarly, and what research says about cheese, heart disease, cancer, and mortality? I cover those topics in my Physionic Insider membership. The link to join is in my bio. Did you know cheese and butter can affect cholesterol differently despite containing similar amounts of saturated fat? References: Feeney EL, et al.
