@effortlessmeals: Golden, crisp pork cutlets with a Parmesan breadcrumb crust, fresh lemon, and a peppery arugula salad. An easy dinner that feels a little special! 🍋 💡 Tip: Rest fried cutlets on a wire rack instead of stacking them, and serve the salad alongside to keep that crust crisp. Crispy Pork Milanese with Lemony Arugula Recipe — Serves 4
Ingredients
For the pork:
* 4 boneless pork loin chops, about 1½ pounds total
* ¾ teaspoon kosher salt
* ½ teaspoon black pepper
* ½ cup all-purpose flour
* 2 large eggs, beaten
* 1½ cups plain breadcrumbs
* ½ cup finely grated Parmesan
* ½ cup olive oil, for shallow frying, plus more as needed
* Lemon wedges, for serving
For the salad:
* 4 cups arugula
* 1 cup halved cherry tomatoes
* 1 tablespoon extra-virgin olive oil
* 1 tablespoon fresh lemon juice
* Salt and pepper, to taste
Instructions
1. Prepare the pork: Place chops between sheets of plastic wrap and pound evenly to ¼ inch thick. Pat dry and season both sides with salt and pepper.
2. Set up the breading: Put flour in one shallow dish and beaten eggs in another. Combine breadcrumbs and Parmesan in a third.
3. Bread the cutlets: Coat each cutlet lightly in flour, shaking off excess. Dip into eggs, then press firmly into the breadcrumb mixture.
4. Fry: Heat the olive oil in a large skillet over medium-high heat until shimmering. Cook in batches without crowding, approximately 3–4 minutes per side, adjusting the heat if the crumbs brown too quickly. The center should reach 145°F; thin cutlets may cook sooner.
5. Rest: Transfer to a wire rack and let rest for 3 minutes. Add more oil between batches as needed, allowing it to heat before adding more pork.
6. Make the salad: Toss arugula and tomatoes with extra-virgin olive oil and lemon juice. Season to taste.
7. Serve: Plate the cutlets with the salad alongside and lemon wedges for squeezing over just before eating.
