My essential west African spices. I don’t know if this reflect my essential spices truly because from a lot of my videos, I use far more seasonings. My I have been getting too many questions so here is a small teaser 1. Guinea cubeb (uziza/masoro/esoro wisa) is a local peppercorn. It is pepper ish with almost a sour flavour. It is also similar to the long tail peppercorn. I love this in savoury dishes but we use it for drinks and porridges in Ghana. The leaves are eaten commonly in Nigeria 2. Alligator pepper/grains of paradise (efom wisa) . So grains of paradise is actually a group of false peppercorns that grow in pods from the ground. Depending on where you are they can either taste like pepper or like cardamom. In west Africa, they are spicy and ginger ish in flavour but also floral 3. Grains of selim (whentia/uda) these pod like spices are bitter and woody. Idk how to explain this well 4. Aidan fruit (prekese/uyayak): these spices make any soup smell amazing! It is a little sweet and floral. It’s perfect for palm nut soup but I like to mix it with hot chocolate 5. Fermented locust beans (dawa dawa/iru/ogiri (fyi there are different types of ogiri)netetou/soumbala/kolgo) are alkaline fermented locust beans used to add a unique flavour and aroma to many foods. There are other alkaline fermented products that function similarly Other spices include guinea plum (gbafilo), coco plum (umilo), country onion, akpi/njangsq, penja pepper etc. Unfortunately I can’t share more because it’s in my book😅 To learn more about these spices, make sure to check out my latest YouTube video on pepper soup spice. #peppersoup #nigerianfood #AfricanFood #africanspices #ghanaianfood
