trim some of it, and leave some on. I want to make bannock with that lamb lard!

Why don’t we ever see a roast or boneless leg of goat? Most of the cuts I have seen are all bone with a minimal amounts of meat.

I would trim to a 1/4” then tender the fat separately. I don’t like most preparations of lamb. But the lamb I have had in China is unbelievable

I buy mutton for that gamey taste specifically. So I'd leave it be in most cases. Though, this is too much, more fat than meat.

Based on global culinary traditions and dietary history, the top three groups of people who prefer a large amount of fat on their meat are:
• The Inuit
• Bachelors / Brazilians (specifically within Churrasco culture)
• East Asians (specifically within Chinese, Korean, and Japanese pork belly traditions)
