I made a chewna melt 🍞🧀 ingredients: sourdough red leicester cheese tuna mayo mix: tuna (@Rio Mare is the best, but not essential) kewpie mayo (this is essential) yoghurt (has to be full fat, love my 5% @FAGE ) dijon mustard pickled jalapeños red onion fresh parsley essential: salt and vinegar crisps (these @Waitrose & Partners ones are wow) one singular well sized pickle now to cook: first, I don’t measure a single thing for my tuna mayo mix, sorry…. I just go off how much I fancy. I do roughly half Kewpie mayo and half greek yoghurt, then add a lil bit of dijon mustard, chopped jalapeños, red onion and fresh parsley. Salt & pepper. Mix it all together and have a taste to see if you need anything else. now for the sandwich, grab your sourdough, pile on your tuna mayo mix and add as much red leicester as your heart desires. Personally, I think more is more when it comes to cheese, we don’t want a sad tuna melt. the easiest way to cook this is in the air fryer. Less mess, less washing up, lovely. Just pop it in till the bread is golden and the cheese is all melty. BUT if you fancy making it in a pan, spread a lil bit of mayo on the outside of your bread before toasting. Trust me on this one, it creates the nicest golden crust. Cook on both sides till crispy and the cheese has melted. Finish with a mandatory handful of salt & vinegar crisps and a pickle. you’re welcome and ENJOY
