@amanda.ducks: Not your classic lasagne but nutritious and delicious nonetheless 🧜‍♀️ Makes 6 serves Ingredients: Lentil ‘mince’ sauce: 1 brown onion 2 garlic cloves 1 carrot 2 celery stalks 2 tbsp olive oil 1 + 1/2 cups raw walnuts 2 tsp dried italian herbs 1/3 cup tomato paste 3 tsp vegetable stock powder (add less if you like less salty flavour) 1 x 400g can brown lentils 1 + 1/2 cups water Creamy sauce: 1 + 1/2 cups raw cashews 300g silken tofu 1/4 cup nutritional yeast 1 tsp dijon mustard 1 tsp white miso paste Juice of 1 lemon 1/3 cup water As well as: 300g lasagne sheets 100g fresh spinach Method: Preheat the oven to 190 degrees celsius, fan-forced and prepare a 30cm long x 20cm wide x 15cm deep baking dish (or there about). Add the cashews to a deep bowl and cover with boiling water. Set to the side. Peel and chop the brown onion, peel the garlic, cut the ends off and roughly chop the carrot and celery. Add them all to a food processor and chop into small pieces. Place a large, deep frying pan over medium-high heat on the stove, drizzle with olive oil. Once hot, add the chopped veggies and fry for 4-5 minutes, stirring occasionally. Add the walnuts to the food processor and blitz into a fine crumb. Add to the frying pan, along with the italian herbs, and fry for 2-3 minutes. Then, add the tomato paste, vegetable stock powder, lentils (liquid included) and water. Stir to combine well, then reduce the heat to low-medium. Leave to simmer for 10 minutes, stirring occasionally. Drain the liquid from the cashews. Add the cashews, along with the rest of the creamy sauce ingredients, to a blender and blend until smooth (approx 3 minutes). You may need to do this in two seperate parts, depending on the size of your blender. Layer the ingredients in your baking dish in this order. Lentil mince sauce, lasagne sheets, spinach, creamy sauce, lasagne sheets, and so on, until you have used up all of the ingredients. Then, cover with foil and place into the oven. Bake for 30 minutes, then remove the foil cover and bake for a further 15 minutes. Remove from the oven, slice into 6 even pieces and enjoy! #vegan #veganrecipe #plantbased #veganmealprep

It’s funny that lasagne and bolognese were slave famine foods mixing whatever meat they had left in the kitchen, today they will make the famine food only with plants double slavery 😂😂🤦‍♂️
