Slow-Braised Smoky Beef Shank with Rich Garlic Gravy Ingredients Bone-In Beef Shank – 4–5 lbs Yellow Onion – 2 large, roughly chopped Carrots – 3 large, cut into chunks Celery – 3 stalks, chopped Garlic – 8 cloves, minced Beef Broth – 4 cups Tomato Paste – 3 tbsp Worcestershire Sauce – 2 tbsp Soy Sauce – 1 tbsp Olive Oil – 3 tbsp Unsalted Butter – 3 tbsp Smoked Paprika – 2 tsp Garlic Powder – 1 tsp Onion Powder – 1 tsp Dried Thyme – 1 tsp Fresh Rosemary – 3 sprigs Bay Leaves – 2 Salt – 1 1/2 tsp Black Pepper – 1 tsp Brown Sugar – 1 tbsp Apple Cider Vinegar – 1 tbsp Fresh Parsley – 2 tbsp, chopped Recipe Preheat the oven to 325°F (165°C). Pat the beef shank dry with paper towels to remove excess moisture. In a small bowl, combine smoked paprika, garlic powder, onion powder, dried thyme, salt, and black pepper. Rub the seasoning mixture generously over the entire beef shank, making sure to cover all exposed surfaces. Heat olive oil in a large heavy-bottomed skillet or Dutch oven over medium-high heat. Sear the beef shank for 4–5 minutes per side until a rich, dark-brown crust develops. Remove the beef and set aside. Add butter to the same pan, followed by chopped onions, carrots, and celery. Cook the vegetables for 5 minutes until softened and lightly caramelized. Add minced garlic and cook for another minute. Stir in tomato paste and brown sugar. Cook for 2 minutes to deepen the flavor of the braising sauce. Pour in beef broth, Worcestershire sauce, soy sauce, and apple cider vinegar. Stir well while scraping up the flavorful browned bits from the bottom. Return the beef shank to the pan and add fresh rosemary and bay leaves. Make sure the cooking liquid reaches approximately halfway up the meat. Cover the pan tightly with a lid or aluminum foil to lock in moisture and prevent the beef from drying out. Transfer to the preheated oven and slow-braise for approximately 3 1/2–4 1/2 hours, depending on the thickness, until the meat becomes fork-tender and pulls away easily from the bone. Carefully remove the beef from the oven. Transfer it to a wooden cutting board or serving platter and allow it to rest for 10 minutes. Remove the rosemary stems and bay leaves. Simmer the remaining cooking liquid until it thickens into a rich, glossy gravy. If needed, mash some of the softened vegetables into the sauce for extra body. Gently pull the tender beef apart with two forks, keeping some larger pieces intact. Spoon the hot gravy generously over the meat. Garnish with freshly chopped parsley and serve with roasted potatoes, steamed vegetables, or buttery mashed potatoes. Follow for more delicious slow-cooked beef recipes and homemade comfort food!
