Lasange-style conchiglioni bake 😍 pasta bake levelled upppp so every bite is the perfect ratio of pasta to sauce 🙌🏼 this was so so good!!! The recipe serves 4! 👇🏼 554 calories per portion 53g carbs, 17g fat, 43g protein Ingredients 250g conchiglioni 1 tbsp olive oil 1 small onion, finely diced 1 small carrot, finely diced 1 celery stick, finely diced 2 garlic cloves, crushed 500g 5% fat pork mince 1 tsp dried oregano 1/2 tsp fennel seeds 1.5 tbsp tomato purée 1x 400g tin finely chopped tomatoes 1 tsp worcester sauce 250ml beef stock 1-2 bay leaves Salt and black pepper 100g lasagne light white sauce 70g 30% reduced fat cheddar 5g grated parmesan Cook the onion, carrot, and celery in some oil for around 10 minutes to soften, then add garlic for a minute or 2. Add the mince and cook for 10 minutes until browned, then stir in the oregano, fennel seeds and tomato puree. Pour in the tinned tomatoes, the Worcester sauce, 250ml stock and a bay leaf or two. Stir and simmer for 10-15 minutes. While it’s cooking, boil the pasta a couple of mins less than the packet instructions and reserve the pasta water. Heat your oven to 200°C fan. Remove the bay leaves from the sauce, stir in a ladle of pasta water, season with salt and pepper and take off the heat. Spread a thin layer of the bolognese across the bottom of a large baking dish. Fill each pasta shell with a teaspoon of the bolognese and line up the stuffed shells in the dish. Top with the white sauce, cheddar and parmesan and bake for 15-20 minutes or until bubbly! 📝 NOTES: if the pasta shells start sticking together before you’re ready to use them, try using any remaining pasta water to loosen them up - the starchiness of the pasta water helps to hold the sauce. they’re still sticky or too hot, you can rinse under cold water as it doesn’t make too much difference!
