@gingerfootgarden: When should you harvest ginger? 🫚 If you’re growing ginger in a colder climate like I am here in Maryland, knowing when to harvest is especially important. Ginger typically needs about 8–10 months for a mature harvest, but you can also harvest younger rhizomes earlier. Here’s what I look for: 🫚How long the ginger has been growing. 🫚Whether the foliage is starting to yellow and dry. 🫚How close we are to the first frost. 🫚Whether the rhizomes are large enough to harvest. I start my ginger indoors during winter to give it as much growing time as possible before the colder weather returns. And here’s something worth remembering: You don’t have to wait for the foliage to die back completely to harvest ginger. In colder climates, protecting your harvest from freezing temperatures is often more important than waiting for the perfect maturity sign. I also like saving some healthy rhizomes for the next growing season. Have you tried growing ginger at home? #gingerharvest #growingginger #containergardening #zone7gardening #growyourownfood
