Because it’s not a real “crab” stick. Most “crab” sticks are just imitation crab, which is just a type of fish that’s shaped into that.

Any crab you meat you didn’t crack out of the shell yourself is processed. Crab meat spoils very quickly, like most seafood, so the idea of packaging real crab meat just isn’t appealing. Even if they vacuum sealed it right away that just means you’re gonna have dry ahh crab

The package most likely says imitation crab which is ground up fish meat made into very fine strings and rolled into a stick with flavorings and food dye. If you want real crab look for lump or shell on.
