Nothing Beats Mac n Cheese 🥺💛 Servings: 3 people 🫶🏻 Ingredients: • 8 oz mild cheddar cheese, freshly shredded • 7 oz elbow macaroni or your preferred pasta • 2 tsp butter • 1 tsp all-purpose flour • 3/4 cup milk • 1/4 cup heavy cream • 1/2 tsp paprika • 1/4 tsp garlic powder • 1/4 tsp black pepper • 2 tsp Tony’s Creole seasoning • 1/2 tsp Dijon mustard • Salt, only if needed • Extra shredded cheddar cheese for layering and topping Recipe: - In a small bowl, combine all seasonings. - In a pan over medium-low heat, melt butter and add half of the seasoning mixture. Stir for a minute to bloom the spices, then add flour and whisk continuously for 1–2 minutes to cook off the flour. - Slowly pour in the milk and heavy cream, whisking continuously until smooth. - Add Dijon mustard and remaining seasonings. Stir until the sauce begins to thicken. Do not boil!! - Turn off the heat before adding shredded cheese. Stir until completely melted and creamy. - Add the cooked pasta and mix until evenly coated. - Transfer the mac n cheese to a small baking dish, layering the mac n cheese with shredded cheese in between. - Finish with a generous layer of cheese on top. Bake at 350°F for 10 minutes, then broil until the cheese is golden and bubbly. Keep a close eye on it while broiling! 💛 Tips: * Keep the sauce at a low temperature to help prevent it from turning grainy or separating. Once the sauce is ready, turn off the heat before mixing in your shredded cheese. For the best texture, shred your cheese fresh from the block so it melts smoothly into the sauce!
