With that wall being a little wavey. I would figure out a back splash of sorts. Either attach it to the wall and have some weather stripping on the bottom so when the table is stowed, it would hide any imperfections from that. Or attach it to the table, weather stripping on the top edge. And have it fold down when the table is out.
