Sometimes you just want mac and cheese. This version blends cottage cheese into the sauce, so there are no curds in the finished bowl. 🧀 Approximately 30g protein for the whole recipe. You’ll need: • 2 oz (56g) protein pasta, measured DRY • ½ cup small broccoli florets • ½ cup (110g) low-fat cottage cheese • 2 tbsp skim milk • 2 tbsp shredded cheddar, about 14g • A pinch of black pepper • Up to 2 tbsp reserved pasta water Cook the pasta according to its package, adding the broccoli during the last 3 minutes. Save a little pasta water before draining. Blend the cottage cheese, milk and pepper until smooth. With the pan OFF the heat, toss the sauce with the hot pasta and broccoli, then stir in the cheddar. Add a splash of pasta water if the sauce needs loosening. Warm gently if needed, but avoid boiling it. The estimate uses pasta with 10g protein per 2 oz dry and cottage cheese with 14g per ½ cup. Different brands will change the total. Save this for your next “I want something cheesy” dinner. 🤍 #HighProteinDinner #MacAndCheese #EasyRecipes #GLP1Journey #ProteinMeals
