I didn’t say it needed to be fancy I do get thrilled about a cup of noodles every now and then. I’m going to be so honest - I hate cooking in my van. Hunter is gone mountain biking in Mexico and so it’s girl dinner for me for a WHILE. jk jk. I’ll cook a proper meal. I’m just not nearly as motivated when it’s just for me. And my kitchen set up is a lot more ideal OUTSIDE. Unfortunately for me, the wind makes that very challenging. I need some camp meal inspiration… I usually rotate between rice bowls, soups and tacos.
