Baluchi Kotten @canarybasmati Ingredients: - 2 onions - 4 cloves of garlic - 3 chilies - 3 cans of tuna - 2 tbsps tomato paste - 1 & 1/2 cups of rice - salt - 1 tsp pepper - 1 tsp turmeric - 1 tsp mixed Omani spices ( or any mix spices) - 3 crushed lumis - 1/2 cup tamarind juice ( optional) - 3 tbsps ghee ( or oil) - coriander & lime for garnish - saute the onion till wilted then add the garlic & chili the tomato paste. Tuna and all the seasonings then let it cook on low for a couple of minutes. - thoroughly wash the rice & soak it for 30 minutes then blitz it to crush the rice. Add the rice to the pot with 4 cups of water and the tamarind juice. - let the pot cook on low after it boils for 15-20 minutes while stirring occasionally. - if the rice soaked up all the water add a bit more. You want it to be soupy like a thick soup and the rice is bouncy and cooked fully. - pour it on a serving plate. Brush it with some ghee on the top. Garnish with coriander chili & lime and enjoy. #food #cooking #fish #tuna #oman
