I’m from Alabama and don’t know a soul that eats head cheese. 😱 I think I’ve kinda heard of it, but this was DEFINITELY not a thing in my circle. Also, not sure anyone actually eats ham hocks - they cook with it. So, we use it in beans, greens, etc for flavor/seasoning. And giiiiirl - I wish you could try my tomato pie. My Michigander husband literally begs me to make it all the time. It’s all about the Cabot cheese. 🤌🏼

🤣 this is gold. Girl you need to try the simple southern stuff first! Biscuits and sawmill gravy, chocolate gravy, buttermilk corn bread and pinto beans, mustard greens with vinegar, and oatmeal pie (depression era recipe for pecan pie without pecans and yummy).
